Roasted chicken Legs

Sometimes we don’t get enough time for preparing the yummy dishes which we love and want to cook it soon because of the lack of time and mostly when you have a lot of works to complete and done it fast. The busy life schedule and less time for the kitchen. But there are some varieties of yummy dishes which we can serve to our guest with in taking less time. One of the easiest recipe is roasted chicken.. It took less time with little ingredients.. And easy to cook.

Roasted chicken.. Which i prepared for my cousin,when she visit my place. It is a very easy and mouthwatering recipe and it takes less time and ingredients.

Ingredients

Chicken legs 4

Curd 1cup

Garam masala powder 1tblspn

Redchilli powder 1teaspn

Coriander and cumin powder 1teaspn

Turmeric powder 1/2 teaspn

Chicken masala powder 1teaspn

Lemon juice 1tblspn

Oil 1tblspn

Salt for taste

Oil for frying (vegetable oil or you can add butter)

At first cut and wash the chicken legs very well and pat dry it with a kitchen towel. Now in a bowl mix all ingredients with the chicken legs. Keep it inside the freeze for 1 or 2 hour. Now heat oil in a pan and fry the leg pieces very well until it becomes tender from inside and crispy from outside. cooked it utill it turns brown in colour..Ready to serve 

Enjoy it with green salads or with tomato salsa.. Do try it 😄

Til pitha 

So finally our most imp0rtant festival which is bohag bihu is here… Assamese people celebrates the bihu occasion with full of fun and enjoyment.. Bohag bihu is one of our important festival because we welcome our new year. One of the biggest feast. We arrange lots of different varieties of foods, among them “doi sira”, “pithas” are important.. 

I prepared different dishes because my house is full with guests and my dearest family members. Til pitha is one of a very popular and top traditional dish of the Assamese people. One of the typical dish of our Assamese people. Let’s check the recipe …

Ingredients

Glutinous rice 2cup

Jaggery 100gm

Black sesame seeds 80gm

Scraped coconut 2tblspn (optional)

Water 4cups

Method

Soaked the rice overnight 

Drained excess water and grind it properly. (I used our traditional method of grinding in dheki, you can grind it in grinder also)

Roast the sesame seeds and pound them to remove the outer layer or skin.. It will become white after removing the skin.

Cut jaggery into small piece and add it with sesame seeds.

Dry roast the scraped coconut and add it with the sesame and jaggery mixture.

Now heat a pan which is flat in size or you can use tawa.. 

Now give the powderd rice mixture on the pan. Spread it with your hand smoothly. If you can’t use your hand because of heat then you can take the help using a ladle or spoon.

Now in middle of the batter add the seasme mixture and slightly roll the batter with the help of a spoon. (Fold its sides very carefully)

Heat lightly before taking out from the fire.

Till pitha is ready to serve. Enjoy

 The taste of Assam

Our north-east india has lot of different ingredients.. Which are very flavourable and adds great taste to the cuisines… Such as bamboo shoots,banana flower,different green herbs, Alkaline or (khar)etc.  I am very proud to be a girl of Assam which have such a unique way of living style and cooking habits . Love the different traditions and colourful cultures. Assam is a land of various tribal peoples, they have there unique traditions as well and have there unique way of cooking and preparing foods. 

Mostly the tribal people use less spices and oil into there cuisines. They prepare there foods generally boiling and smoked in wood fire. The whole north east India is a group of various communities people. 

Okay guys.. Now let’s move to the main fact..!  Why i am telling these things.. ;)Because today i am gonna preapre a unique and very simple cuisine of our Assam. Later i will try to post different tribal rustic dishes.

What i am going to cook, is “til diya murgi manxo” Chicken with black sesame seeds. Isn’t it sounds yummmm… 😁 And do you guys know sesame seeds has different health benefits. It is a Combination of calcium and zinc..  And is enriched with anti aging powers. And also very good for our hair growth. 😉 Now let’s go for the recipe.

Ingredients

Black sesame seeds paste 1bowl (2tblspn)

Chicken half kilo

Onion paste 1cup & chopped 1/2cup

Ginger garlic paste 4teaspn

Panch phuran 1/2 teaspn (combination of fennel,fenugreek,nigella,cumin & black mustard seeds)

Black peppercorns 1teaspn

Turmeric powder 1teaspn

Green chillies 4 splited 

Sugar a pinch

Salt for taste

Water as required 

Mustard oil 1/4 cup

Method 

  • Wash the chicken very well and pat dry it.
  • Marinate the chicken with onion paste, half of the ginger garlic paste & salt. Keep aside for 1 1/2 hours.
  • In a deep kadhai or pan heat oil and crackles the panch phuran.
  • Add a pinch of sugar give it to caramelized.
  • Add the chopped onions saute it till Golden brown.
  • Add the ginger garlic paste. Stir it
  • Now add the peppercorns, turmeric and green chilles. Mix it well.
  • Add the marinated chicken. Cooked it till it become tender while covering the lid.
  • Add warm water and mix the chicken very well. (Don’t add much water)
  • Now add the sesame paste and fry the chicken.
  • Check the seasoning 
  • Garnish the chicken with green chilles and a spoon of mustard oil.

 Ready to serve with steamed rice… 😁 Enjoy 🙌

Tuna masala

Today is my rest day .. No office 🙌.. And lots of time to enjoy my favourite work.. Which is cooking…. ! Thinking of to cook something special .. Yesterday i bought a canned tuna from a grocery store.. And as i was thinking to cook something unique, i make my mind to preapre this.. While giving an Indian twist.

I love the canned fish. But tuna fish is my favorite. And my mom loves it as well ! Tuna can be prepared in varieties of way, salad,mashed or fried.. I cooked the fish with few ingredients. Hope you guys will love it.

Ingredients

Canned tuna 1 (small size)

Chopped capsicums 1/2 cup

Onion paste 1cup

Ginger garlic paste 1tblspn

Turmeric,cumin,coriander,redchilli powder 1/2 teaspn each.

Garam masala powder 1teaspn

Salt as required

Oil for frying 

Method

Heat oil in a pan and saute the onion paste. Add the ginger garlic paste saute it well. Now add the capsicums fry it. Add the masalas again saute it. Add salt. Now add the canned tuna, mix it properly. At last add the garam masala. Its ready …😁

 Note = The tuna is preservated fish.. It have salt in it. So be careful while adding extra salt. Check seasoning.

Don’t over fry the fish.. Otherwise it will be mashed. Tuna is very soft. Add it in the last moment. Stir it slightly.

Fish kaliya

Time for the special dish which is my favourite. Fish kaliya is one of a very popular Bengali authentic dish.which is cooked with adding different favoules spices. That gives the mouthwatering taste. Masor kaliya means fish cooked in a gravy or curry. The most common used fish is rou mas (A kind of fresh water carp). In Bengali it is called “rui maach”. As i am from an Assamese family  background… But each and every member of our family love this dish. In fact my father cooked it much better than me .. 👌👌👌👌👌

Now let’s go for the preparation … ✌🍛

Ingredients

1kg rou mas (fish)

Whole garam masala’s 1tblspn

Cashew paste 1cup

Magaj dana (watar melon seeds) 1tblspn

Poppy seeds 1tblspn (Make paste of above these three ingredients together)

Raisins 1/2cup

Whole cumin seeds 1teaspn

Cumin powder 1teaspn

Coriander powder 1teaspn 

Turmeric powder 1/2 teaspn

Redchilli powder 1teaspn

Garam masala powder 1teaspn 

Oil as required

Salt for taste 

Sugar a pinch 

Curd 1cup

Tomato chopped 1cup

Onion paste 1cup

Ginger garlic paste 1tblspn

Method

  • At first wash the fish very well and marinate with half teaspn of turmeric powder,lemon juice of 1,salt as required. And keep aside for an hour.
  • Now in a deep kadhai or pan heat the oil and fry the fish.keep it aside.
  • In the same oil add the whole garam masalas (cardamom, cinnamon, cloves,bay leaves) and whole cumin seeds.
  • Add the onion paste.. Saute it well.
  • Add the raisins.
  • Add the tomato chopped and mix it properly,add the ginger garlic paste and saute.
  • Now add the powdered masala’s except garam masala powder. Mix it.
  • Add the curd. Mix it very well.
  • Now add the white paste of cashew,melon seeds,poppy seeds.
  • Saute it well. Add salt as required.
  • Now add the water .. If you want curry then add more water. I prefer a thick gravy. So give attention while adding water.
  • Give it to boil.. Add the fried fish and cover the lid. Again give it to boil for 15mins.
  • Check the seasoning. 

  • At last add the pinch of sugar and the garam masala powder.


Now this is ready to serve with a hot plate of steamed rice. Yummy 😋😋😋😋

 Mah-prasad recipe

Mah-prashad is a kind of traditional recipe which we offer to god in any ritual occasions. This a tradition among our Assamese culture. It was prepared in the ocassion of puja (worship)at our place. I love the preparation of our Assamese prasad because it is very healthy and have a very good nutrition values. The combinations of split Moog dal (green grams), kala chana (Black chickpeas) and ground coconuts are awesome,with adding salt,sugar and grated ginger. Generally the mah-prasad can be preapered also with adding only grated coconuts and black chickpeas.. That also gives a different taste. The most unique way of serving in banana leaves.. I just love that way.
Method

1/ At first soak the green grams and black chickpeas overnight diffrently in different bowls.

2/Now wash the grams very well. (This is the main process of discarding the skin from the green grams) so be careful while the preparation.

3/ground the coconut (Don’t make fine paste)

4/ Now in a big bowl add the green grams,black chickpeas,coconut,salt,sugar and the rice. (Wash the rice very well)

5/ Now its ready.. 

Note= I had added only green grams and coconut .. If you want to add black chickpeas then you can.

Prasad can be served with different fruits.

Chilli paneer 

Again one of the simple and easy to cook recipe of mine.. Paneer preapred with adding chopped tomatoes,onions,capsicums and different ingredients.

My mom told me to make a dish with paneer.. But, why the same recipes of cooking.. Like sahi paneer,mattar paneer,paneer butter masala etc.. ! So i thought to cook something unique and very simple. This is my simple version of chilli paneer. And i can promise you that this recipe will hit your mouth with the amazing taste …. ! 😁

Ingredients

Paneer 200gm

Chopped onions 1cup (cube size)

Chopped tomatoes 1cup (cube size)

Chopped capsicums 1cup (cube size)

Garlic pods 12

Milk 1cup

Salt as required

Red chilli powder 1/2teaspn

Coriander powder 1teas

Sugar a pinch

Garam masala 1teaspn

Water as required

Oil for frying 

Method

1. In a pan heat oil (vegetable oil) and saute the chopped onions,tomatoes,capsicums and the garlic pods.

2. Add salt for taste. 

3. Add the powderd spices except garam masala powder.

4.saute it properly. Add the paneer cubes.

5. Add the milk and water. (Water one can add about there prefer quantity)

6. Give it to boil. At last add the pinch of sugar and garam masala powder.
