Achari bhindi

Sunday menu should be like something sepical and unique .. it’s it ? Everyone is home spending there rest time.. happiness could be spread with a delicious meal….!! Well…today, i prepared a simple and delicious recipe with bhindi. And this vegetable is actually not my favourite so tried to make something innovative. This is kind of a achari dish adding every masala which we use to make achar. Very simple to cook and taste good 😁👌

Ingredients 

Bhindi (lady’s finger) 100grm [wash and clean with a kitchen towel & cut in length wise]

1 Tomato chopped 

Lemon juice 1/2 tspn 

Sugar a pinch 

Coriander powder 1/2tspn 

Turmeric powder 1/2tspn 

Redchilli powder 1/2tspn 

Dried mango powder 1/2tspn 

Garam masala powder a pinch 

Asafoetida a pinch 

Ginger paste 1/2tspn 

Fennel seeds 1/2tspn 

Onion seeds 1/2tspn 

Mustard seeds 1/2tspn 

Salt & water as required 

Mustard oil 1tblspn

Method 

In a pan heat oil and add asafoetida and the whole spices let it crackles.

Add the ginger paste and the chopped tomatoes saute it well.

Add the powder spices except dried mango powder.

Add sugar and mix it well.

Now add the bhindi and salt,mix it well and cook it well for 20mins. Add water as needed. [Don’t add much water]

When it will cooked well add the dried mango powder & the lemon juice.

Chicken in hot garlic sauce

Perfect dinner menu for the rainy days ! Chicken in hot garlic sauce is one of a very easiest recipe which i love to cook mostly. Best time managment because this is a good habit to have your dinner befor 8.30 or if not possible then befor 10pm. Our family maintain the rule as well ! So a very easiest chicken dish with roti is our yesterday’s dinner menu! 

Ingredients 

Chicken 1/2 kg boneless 

Garlic chopped 1tblspn 

Chopped onions 1cup

Capsicum 2 chopped in square size 

Veg oil as required 

Salt as required 

Sugar 1teaspn 

Red chilli sauce 1teaspn 

Soya sauce 1teaspn 

Vinegar 1teaspn 

Tomato sauce 1/2cup 

Corn stratch (1teaspn dissolved in 1/2cup of water)

Pepper powder 1teaspn 

Method 

At first clean and wash the chicken and marinate with salt,lemon juice and oil for 1hr.

Boil the chicken very well and keep aside.

In a pan heat oil and saute garlic,onions.

Add redchill paste.

Add sugar and the boiled chicken,saute it properly.

Now add the remaining all ingredients except black pepper.

Add the chicken stock and let the chicken be cooked for 15min.we don’t need a watery gravy so don’t add much stock or water.

Check the seasoning and at last add the pepper powder.

The hot sweet sour chicken is ready to serve…!!! Grabe it soon 😋

Chicken roll

Hello my dear Beautiful peoples..!

How many of you loves roll?? I can guess everyone’s favorite!!! Right ?? I tried this recipe before.. and it was good enough! But when i prepared it today.. it was just amazingly yummm and lips smacking… !!! Healthy way of having fast foods at home. Which is very simple and tastes like restaurant foods.. !! 

Ingredients 

Flour 2cup+oil 1teaspn+salt for taste (make a smooth dough by adding water)

For filling 

Fried boneless chicken pieces 1cup

Chopped onions 1cup

Ginger garlic paste 1tblspn 

Salt for taste

Tomato sauce 2tblspn 

Chopped tomatoe 1

Chopped capcisum 1

Red chilli powder 1teaspn 

Garam masala powder 1teaspn 

Eggs 2+1tblspn milk beat it well

Vegetable oil as required

Method 

At first kneed the dough very well and make round size balls..(The balls should be medium in size)

Make rotis (don’t make it too thin)

Now in a pan heat oil and saute the onions very well.

Add the chopped tomato and capsicums,again saute it well.

Now add the ginger garlic paste and mix it.

Add salt as required.

Add tomato sauce and mix it well.

Now add the fried chicken pieces are mix it very well.

Add red chilli powder and garam masala.

Keep aside and let it cool.

Now again in another pan heat a tblspn of oil and add the roti,immediately spread the egg mixture about 1tblspn, in the uncooked side of the roti.adding a teaspn of oil..flip the other side and let it cook.

Now add the chicken mixture and roll the roti..(The egg part of the roti should be inside)

Note: In the chicken mixture you could also add chopped onion at last,which gives an awesome taste)

Note: I prefered normal flour instead of refined flour. Which is good for health.

It’s ready…have it with green chutney..!! 👌😋

Peanut chutney

A very simple and delicious item which is my favourite !This is very easy to prepare and goes best with steamed rice and dal. There is a small story behind this chutney, in my childhood my aunt used to preapre this chutney always when we visit there place,and its make me happy. The taste of her chutney still remaining in my mouth and today i’m very much glade to share her recipe with you all, just giving a twist of mine! Craving for her delicious chutney!! And i simply decided to prepare it !!!

Ingredients

Peanuts handful 

Garlic cloves 10

Dry red chillies 1 or 2

Green chili  1

Curry leaves 11

Sesame seeds 1tblspn

Water to make a paste

Salt as required 

Lemon juice 1/2tblspn (optional)

Method

Heat a pan.

Dry roast all ingredients except lemon juice.

Let it be cool and grind it in a smooth paste adding little water as required to make a paste.

At last add the lemon juice.

Check the seasoning which is most important👍

Serve it with rice,with sabzi or dal,this is a very perfect combo. Do try it & please let me know your feedbacks !

Chicken cooked with bamboo shoot & ghost chilli pepper

one of a popular recipe among all over Assam and including North east states. The combination of ghost chilli pepper and bamboo shoot are just amazing. It gives a unique taste,though the ghost chillies are known as one of the hottest chilli all over the world and the tangy flavour of the bamboo shoot both combined with an amazing flavour. This item can be prepared with pork also and the process of cooking are different in various places of N.E. It can be cook while boiling or saute,roasted,smoked etc.

So this is our today’s lunch menu .. A full traditional and typical Assamese dish. Which was just lips smacking !! 

Ingredients

Chicken 1/2kg (boiled)

Panch phuran 1/2 teaspn

Onion 4chopped 

Ginger garlic paste 1tblspn

Tomato chopped 2

Turmeric powder 1teaspn

Cumin powder 1teaspn

Ghost chilli pepper 1 chopped

Bamboo shoots 1cup

Mustard oil as required 

Salt as required

Sugar a pinch

Chopped coriander 1teaspn (for garnishing)

 At first clean the chicken properly wash it and boiled it well.

In a pan heat oil and cracked panch phuran.

Add chopped onions fry it well till it becomes golden brown in colour.

Now add the chopped tomatoes saute it.

Add the turmeric and cumin powder and the chopped ghost peppers.

Add salt and a pinch of sugar.

Now add the boiled chicken,cooked it for 5min.

Add the bamboo shoot and mix it properly.

Add water as required cover the lid and let it Cook for extra 15mins

Checked the seasoning,at last add chopped coriander leaves & serve it with hot steamed rice. 

Note: Add very less quantity of ghost chilli pepper. Adding excess will make the curry very very spicy! Believe me ghost chilies are really very hot ! 🔥🔥🔥

Behua, a typical assamese recipe !

“Behua” is a type of traditional chutney prepared with mustard seeds adding indigenous soda or (kolakhar). Behua has different names in different places of Assam,such as “Kharoli”,”Behar” but we called it “Behua”. Behua has a unique flavour it goes best with “Poita bhat” with a piece of fried fish & with some “Bhoot jolokia achaar” ! Yummm such a lips smacking taste !!!!

“Behua” is prepared in a traditional process. The seeds of mustard are grined in a “Dekhi”! (A traditional method of grinding with the help of our legs). But now a days few peoples have “Dekhi” in there homes. So they prepared the mustard powder with the help of electric grinding machin. But i think the traditional process of making “Behua” was best !

Ingredients

Mustard seeds 250grms

Kolakhar (soda) 1/2cup {kolakhar is prepared by the banana cover of “Athiya kol” by keeping in the sun for 2days & burning it, the ash is soaked in the water which is called “khar” in Assam.This a typical recipe only prepared in our Assam & N.E} will updated it soon !

Salt as required 

Green chillies 4 chopped (optional)

Process of making “Behua

At first clean, wash the mustard seed and keep out in the sun for 1day.

Wash and cut the banana leaf for wrapping the “Behua” brush oil in one side and keep it in the sun for 20mins.

Grind the seeds very well and sieve it.

In a bowl add the mustard powder,salt,green chilles,soda (kolakhar). 

Note: Be careful while adding the soda, excess use of soda will make it very bitter and it will taste bad. So add the soda little by little when you are preparing the dough.(like you are adding water in making dough of roti) 

Now knead the dough for 15mins or until oil appears,make a ball and flatten it.

Wrapped it in the banana leaf with a help of string.

Now again keep the parcel in the sun for 3days.

In the 3rd day the “Behua or “Kharoli” is ready to eat as chutney.

Mango ice cream shake

This a very common routine in our family to have a chilled drink of mango after breakfast!! Also one of a healthy diet menu.But “mango ice cream” shake … Sounds little bit unacceptable!! Lol just know i’m telling about a healthy diet but is mango ice cream shake can be a healthy drink ????? Nah ! Never .. not at all ! Wait guys .. ! Actualy yesterday was Sunday & (Sunday) is my cheat day of my 6days of workout plan.so that is why i’m telling about the “Mango ice cream shake” ! Though ice cream have lots of calories and sugar is a kind of monster it can make harm in your workout diet ! Hehe 😁 So guys those who are health conscious and fitness freak like me…if you guys can skip these kind of foods like fast foods,carbs,too much of salt,sugar. By skipping it will very much best and profit for your health! Do you know guys 10grms of salt all we need in our daily meals! Skip sugar & always try to use honey or jaggery instead of sugar! 

Okay know let’s come to the point & move to the recipe !

Ingredients

Ripe mango chopped 3

Ice cream 3 scoops 

Black salt a pinch

Sugar 1tblspn

Milk 1cup

Curd 1tblspn

Cardamon powder a pinch

Method

Wash and chopped the mangoes.

Blend it in a blender with adding milk,curd, sugar,black salt. Now strain the extra pulps.

Add the ice cream and mixed it with hand. Add the cardamom powder mix it well.

Now in a glass add a scoop of ice cream then the juice again garnished it with ice cream and mango pulp. 

Its ready & really very very yumm !!

The juice is so heavy and full with calories.. But no problem coz sometime its better to satisfy our cravings ! Lol😂
