Again m back with an interesting simple recipe…!! Hope you guys will love it.Give it a try if yes 😁🀘

This one is my favorite…goes best with all kind of dishes … you can also add this pickle like sauce in noodles or fried rice…! Or for our assamese foods lover add this with our very own “pitika”,”behua” or “gaj tengar achar”..😁 sound delicious rite?? Yeah lets go for the recipe πŸ€—

Ingredients 

Red chilles about 1/2kg 

Mustard oil 2cups 

Vinegar 1cup 

Salt to taste 

Method 

At first clean and wash the chillies and remove stems

Clean it with a kitchen towel.

Now make a fine paste,blend to a fine consistency.

Add all remaing ingredients. Mix it well.

Now keep it under the sun for 3 days.

Now preserve it inside a glass airtight container.

That’s it ….ready to serve πŸ˜„

Urohir sorsori [Indian bean cooked in a thick mustard gravy]

“Indian bean” is known as urohi in assamese language.One of the most popular perennial vegetable crop in India.It can be cooked in different process. I cooked it adding some ginger garlic paste & paste of “Mustard seeds” very few ingredients added.Type of the dish is called as “SORSORI”

Ingredients 

Indian beans 12 to 14 (wash and cleaned) 

Potato 1 chopped 

Ginger garlic paste 1tblspn 

2 green chillies+mustard paste 1/2 cup

Red dry chilli 1 

Turmeric powder 1/2 teaspn

Bay leaves 2 

Salt to taste 

Oil 1tblspn 

Water 2cups 

Method

In a pan heat mustard oil.Add the bay leaves with the red chilli. 

Add ginger garlic paste.

Add turmeric powder.

Add the Indian beans and chopped potatoes.

Mix it well add salt and water, cover the lid and let it boil for 10mins.

Now when the water seems reducing add the paste of mustard. Add a cup of water again.

Let it boil for about 5mins.

Its ready. You can garnish with a teaspn of mustard oil and some chopped green chillies.

Have it with steam rice. Give it a try πŸ‘πŸ˜š

Ahhhhhh….m blogging after a long time.Feeling great..😊 Really very happy that i got some moment only for cooking  & blogging! It was a very busy month..very busy starting up my new business..! Well later will discuss about that πŸ˜πŸ˜¬πŸ˜…

Now let’s move to the main point… yeah so i decided to cook one of our traditional popular assamese recipe..! Yeeeeee  πŸ€—

A very basic recipe of our assamese people.”Lau bilahi masor tenga” Drooling? I know i know you are … πŸ˜† so here is the recipe πŸ‘‡

Ingredients:

  • 4-5 pieces of Fried fishes ( Here i have used Rohu fish) clean & wash it well.

  • 1 small size bottle gourd (peeled and cut into medium slices)

  • 1-2 tomatoes, ( Cut into medium pieces)

  • 1 medium onion, sliced 

  • 1 pinch sugar

  • 1 tsp turmeric powder 

  • 1-2 green chillies 

  • 2tsp mustard oil

  • salt to taste

  • Few chopped leaves of coriander

    Method:

  • First boil the bottle gourd pieces in a glass of water adding a pinch of salt .

  • Heat a pan with mustard oil. Add the green chillies and onion and fry them for 1 min

  • Add the tomatoes and cook till pulpy.

  • Add turmeric and salt mix well.

  • Now its time to add the lau (bottle gourd) slices (along with the boiled water) to the pan. Stir and cook for 10 minutes.

  • Add the fish pieces and cook with lid on at low flame for 10-15 minutes,add the pinch of sugar. 

  • Check the seasoning 

  • Sprinkle the chopped coriander leaves and seve with rice…..

Prawn frittersΒ 

Look at that crispy tasty fritters….😍

Prawns can be cooked in different process…like frying with onions,deep frying,steamed prawns,roasted prawns,smoked prawns..but these prawns fritters are extra flavored…& perfect for the winter days.I prepared the fritters for our lunch.

Ingredients 

1/2cup gram flour 

Prawns 50gm

1tblspn chopped onions 

1teaspn ginger garlic paste 

Chopped coriander 1cup 

Turmeric powder 1teaspn 

Chopped green chillies 4 

Red chilli powder 1teaspn 

Cumin powder 1teaspn 

Salt for taste 

Lemon juice 1teaspn 

Baking soda 1 pinch 

Rice powder 1teaspn 

Water for making batter 

Oil for frying 
Method

At first wash the prawns very properly. I had used small prawns.

Mix all the ingredients adding water except oil.Make a batter.It should not be too thick or not in a flowing consistency.

Heat oil in a deep pan.

Add the batter in the hot oil with the help of a spoon one by one.

Fry it till golden brown.

Ready to serve.

Mutton curry cooked on a wood fire

All about my winter food menus …😍

 I think for me winter is all about cooking the delecious recipes on a wood fire.. & enjoying the environment….enjoying the mouthwatering dish! Cooking on a wood fire increase the flavour of the foods, which taste delicious…!Here is the recipe of mutton curry which i cooked over on a wood fire…It was super delicious..the smokey flavour which comes from the wood fire added more taste into the dish.

Ingredients 

Mutton 1kg

Oil for frying 

Salt to taste 

Sugar a pinch 

Water as required 

Onion chopped 4 

Ginger garlic paste 1tblspn 

Chopped tomatoes 3 

Green chillies 4 chopped 

Cumin seeds 2teaspn 

Turmeric powder 1teaspn 

Redchilli powder 1teaspn 

Homemade garam masala powder 1tblspn 

Dry red chillies 3 

Cumin powder 2teaspn 

Coriander powder 2 1/2 teaspn 

Curd 1cup (beaten)

Chopped coriander leaves 1cup

Method 

At first wash the mutton very well & marinate with cumin,coriander,turmeric,redchilli powder each (1teaspn),salt,2teaspn of oil.keep it for 2hr. 
Boil the marinated mutton with 2  large potatoes upto 5whistles in a pressure cooker.

In a hot deep pan heat oil crackles cumin seeds.Add the chopped onions,red chillies and saute it very well.

Add the ginger garlic paste mix well.

Add the remaining all masalas except the garam masala powder.

Add tomatoes and chopped green chillies.

Add curd. Cooked it for a Min.

Now add the boiled mutton.Mix it well.

Add seasoning.Fry it well for 15mins.

Now add the remaining mutton stock with potatoes.

Let is boil for extra 10mins.

At last add the garam masala powder & chopped coriander leaves.

Ready to eat. 

Serve this delicious mutton curry with a bowl of hot steamed rice..πŸ›

“BREAKFAST” is an important part of my dail diet routine.Not only for me this is an essential menu for the entire people of the world 😁..Skipping breakfast is dangerous! As you guys know that i’m a fitness freak.. who is very much conscious about the health,diet,body etc!!πŸ˜‚πŸ˜‚ Okay…. lets come to the point …I prepared a very simple fitness recipe for today’s breakfast.Very less ingredients used with few spices.

Eggs 2

Chopped coriander 1cup 

Tomato chopped 2

Chopped onions 1cup

Turmeric powder 1pinch 

Salt to taste 

Lemon juice 1teaspn 

Ghee 1teaspn (Healthy fats)

Chopped green chillies 2 

Method 

In a pan heat ghee,add the chopped onions.saute it.

Now add the tomato chopped and green chillies.

Mix it well and cook it for a min.

Now add the turmeric,salt & mix it again.

Add the eggs and mixup well.

At last add the lemon juice and fresh coriander leaves.

How to make protein balls

Protein balls are power package after or before a workout.you can carry it anywhere and can satisfy the hunger.It gives intense energy and keeps our stomach full.

Ingredients 

Almonds 10 chopped 

Chia seeds 1tblspn 

Flax seeds 1tblspn 

Raisins 1tblspn 

Pumpkin seeds 1teaspn chopped

Oats 1teaspn 

Peanut butter 1tblspn 

Protine powder 1teaspn 

Method 

Dry roast almonds,oats,chia,flax and pumpkin seeds.

Now mix all the ingredients and make balls.

Chill it for 5mins and enjoyπŸ’ͺ

Banana flower frittersΒ 

Here go the very simple and delicious fritters recipe for my beautiful friends!!

Banana is a source of different nutrients.And the raw banana is a pack of iron and different healthy minerals.The flower of the raw banana,which is known as “Koldil” in our assam,is cooked in various process,while frying,making gravy or fritters etc.

Ingredients 

Chopped banana flower 2cups 

Rice powder 2tblspn 

Gram flour 1/2cup

Water as required 

Baking 1/2teaspn 

Salt for taste 

Pepper powder 1teaspn 

Cumin powder 1teaspn 

Mustard oil for frying or you can bake it.

Chopped onions 1cup 

Chopped curry leaves 10 

Method 

At first boil the chopped banana flowers,and keep it aside.

Mix all ingredients except oil.

Now heat oil in a pan.

Make round size balls with the help of your palm.

Deep fry the fritters.

Simple post workout smoothieπŸ€—Β 

This is my favorite drink after my daily workout. It gives me lot of energy and stability. A best drink for the lean muscles growth.Very less ingredients needed and easy to make.I prepared it yesterday & have it after my postworkout.

Ingredients 

Chia seeds 1/2cup (Soaked in warm water for an hour)

Ripe banana 1 chopped 

Soya milk 1cup 

Almonds 5chopped 

Flax seeds for topping 

Method 

Grind all the ingredients in a mixture.Keep it in the refrigerator.Topped with flax seeds.Have it between 1hour after your workout done.Enjoy πŸ’ͺπŸ€—

Gluten free “Malai Kofta”

“Malai kofta” is a very popular recipe in all over India.Malai means cream while kofta means balls made with grated cottage cheese or paneer and with or without mashed potatoes,which are deep fried in oil. A rich and sweet gravy with some mild spices. But gluten free is something extra.. i am trying to alter some ingredients.Like i added curd instead of cream.(Curd made by low fat skimmed milk),and my dumplings are made by gram flour,sauted in less oil.You can also bake the dumplings.And my gravy was cooked in coconut oil.Some healthy changes..which was good enough to taste. lets move to the recipe.

Ingredients 

Grated cottage cheese 1cup 

Boiled mashed potatoes 3

Pink salt to taste 

Honey a spoon 

onions 3 boiled and make paste 

Ginger 1teaspn 

Whole garam masala (5 cardamom,1 inch cinnamon,cloves 5,javitri 1,bay leaf 1)

Pepper powder 1teaspn 

Curd (low fat) 1cup blended well.

Gram flour 1/2cup 

Cashew paste 1/2cup

Raisins 10/12 chopped 

Skimmed milk 1cup

Method 

Boil the potatoes and mash it with grated paneer,chopped raisins and salt.

Make round size balls. 

Now make a paste with gram flour,salt and water. (Don’t make it too thick).

Coat the balls in the gram flour mixture and fry it.Keep it aside.

Now for the gravy heat oil in a pan.

Boil the onions and make paste.Add it in the pan with the whole spices.

Add ginger paste and saute it.

Now add the seasoning with honey.Mix it.

Add cashew paste.Mix it very well.

Add the beaten curd and mix it properly.

Add milk and water if required.Let it boil for 5Mins.

Now drop the dumplings into the thick gravy. Mix gently.

Add pepper powder at last.

Ready to serve the gluten free delicious “Malai Kofta’s”.
